how it all began
my story
It was a cold, grey November morning. The fine rain, which only occurs in northern Germany, slowly settled on our faces and clothes, like a second, velvety cold skin. We drove to Hamburg with our 10-month-old daughter for a short weekend holiday...
courage to fail
my craft
I didn't learn my craft through the traditional apprenticeship route, but through intensive self-study. My main focus was always to create an excellent product that would stand out from other pastries with its special taste and texture. It was also about perhaps creating something really new in terms of taste. I always knew what a new variety should look and taste like, but not how to get there. So I tried things out, experimented with raw materials, baking temperatures, different dough consistencies and processing methods until I was happy with the result. Every piece of dough that didn't turn out well, every piece of chocolate that turned white and every piece of cream that melted brought me a little closer to my goal. So today I'm happy that I never gave up and that I can now make so many delicious pastries with my employees.

But what is the use of all the dedication and passion if you then skimp on the ingredients? That is why I choose my ingredients carefully and with consideration. I pay particular attention to the taste of the raw material. Expensive does not mean good, but you cannot create anything great from cheap ingredients. That is why I am happy that I have been able to build up a network of reliable and excellent partners over the last 20 years. There are small hazelnut farmers from Piedmont, nougat specialists from northern Germany, Swiss and French chocolatiers and regional farmers who supply me with free-range eggs, spelt flour and dairy products. I would not want to be without any of them, because without their passion and love for their products I would not be able to make such delicious pastries and chocolates myself. That is why I would like to thank all of these excellent partners!
